Sweet Orange Rice Salad

This weekend I catered a bunch of meals for a yoga retreat. It was a good exercise in budgeting, punctuality, and maximizing nutrition in every meal. Just because.

I figured if anyone could tell a lovingly prepared and nutritiously thought through meal, it would be the yogis. So what kind of dessert would I make that could be both delicious and not a straight-to-the-heart calorie bomb?

Red Thai rice cooked in apple juice makes a very sweet and healthy base to put under some chopped oranges, lemon yogurt and (the only mischievous ingredient) candied almonds and pistachios. The yogis loved it - and had the left overs for breakfast.

Anyone who loves their desserts super sweet could mix in a little maple or agave syrup - instead of yogurt, a dollop of ice cream. However you choose to serve up your desserts, may the Force be with you.

Not only will it help you touch your toes, it will lively up yer taste buds too! The apple juice and orange combo is very clean tasting. Lemon yogurt just finished it nicely.
